Description
The CellBlue project aims to develop new foods based on lab-grown octopus, creating hybrid products that reproduce the taste, texture, and nutritional value of traditional octopus. The initiative focuses on innovative solutions, combining cultured cells with advanced technologies, such as 3D printing, to generate sustainable, high-quality alternatives.
Led by Cell4Food, the consortium seeks to respond to the challenges of overfishing, promote sustainability, and boost the blue economy. The main objective is to accelerate the introduction and acceptance of cell-based products in the market, bringing together expertise covering the entire process: from cell isolation and cultivation to production, characterization, new product development, and regulatory and sensory evaluation.
